2019 Shiraz Riesling
Forest Fruit. Spice. Fine. Textured.
Co-fermentation for Shiraz (95%) and Riesling (5%). 3 day cold soaked and gently foot crushed. Once fermentation commenced, the fermenting juice was pumped over twice daily through a screen in open fermentation, for long gentle extraction. Basket pressed before the completion of fermentation to old neutral oak. Matured on full lees for 12 months. Left to settle before being clarified and bottled unfined and unfiltered in May 2020. A fun spicy unique wine!
